Japanese Style Curry with Vegetables


  • 1 eggplant

  • 1 carrot

  • 1 broccoli

  • 1 onion

  • 2-3 okras

  • 2 cloves of garlic

  • 1 teaspoon soy sauce

  • 250ml chicken stock

  • 100ml water

  • 2-3 curry blocks

  • 1 small piece of chocolate


  1. Cut the eggplant into strips. Cut the carrots, broccoli and onions into small pieces.

  2. Blanch the okras for 1 minute and chop into small pieces.

  3. Mince the garlic  and cook on medium heat until it is fragrant. Then add in onion, carrot, eggplant and broccoli.

  4. Add chicken stock and water. Once it boils, add the curry blocks and chocolate.

  5. Cover and put on medium-low heat until the vegetables softened and cooked thoroughly. Season with soy sauce and put in the chopped okra before serving.
