Japanese Potato Salad


  • 2 potatoes

  • 1/2 carrot

  • 1/2 ear of corn

  • 4-5 tablespoons of mayonnaise

  • 1/2 teaspoon of soy sauce

  • 1/2 teaspoon of honey


  1. Peel the potatoes and boil in hot water until they are soft. If a chopstick can easily go through, they are ready. Take them out to dry.

  2. Cut the carrots into cubes and cut the corn kernels from the cob. Boil them until they soften. Take them out of the water to dry.

  3. Make the salad dressing by mixing mayonnaise, soy sauce and honey together.

  4. Use a large spoon or fork to mash the potatoes and the carrots. Add in the corn kernels.

  5. Mix the salad dressing with the mashed potatoes. Put the salad in the fridge for 1 hour before serving.
