Stir-Fried Scallops with Broccoli in XO Sauce


  • 1 broccoli

  • 10 scallops

  • 3 cloves of garlic

  • 3 slices of ginger

  • 1 teaspoon of cooking wine

  • 1 tablespoon of XO sauce

  • 1 teaspoon of sugar

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of white pepper


  1. Put the scallops in boiling water and blanch for 30 seconds to 1 minute

  2. Take the scallops out and dry. Pat dry with paper towels and marinate with a bit of salt, white pepper and cooking wine

  3. Chop the broccoli. Add a bit of sugar in boiling water and blanch for 3 minutes.

  4. Sear both sides of the scallops in high heat until they are golden and take them out

  5. Stir fry the ginger and garlic until they are aromatic. Then, add in the XO sauce.

  6. Add the broccoli and continue to stir fry. Put in the scallops, add sugar, cooking wine and salt. Continue to stir fry quickly for 1-2 minutes.
