Hot and Sour Potato Shreds


  • 2 potatoes

  • 2 scallion

  • 3 chili peppers

  • 3 cloves of garlic

  • 2 pieces of ginger

  • 1/2 teaspoon of sichuan pepper

  • 2 tablespoons of white vinegar

  • 1/2 teaspoon of sugar

  • 1 teaspoon of salt


  1. Wash the potatoes and peel the skin. Shred them and soak them in water. Change the water twice to wash the starch away and dry.

  2. Cut the scallions into thirds. Chop the chili peppers. Mince the garlic and ginger.

  3. Fry the Sichuan peppers on low heat until it’s aromatic. Then take the peppers out.

  4. Sauté the minced garlic, minced ginger and scallions on medium heat.

  5. Add the potato shreds. Add the chili peppers, sugar and white vinegar and cook until the shreds soften.

  6. Add salt to season.
