Spaghetti Squash Soup with Dried Scallops, Corn and Pork

Ingredients

  • 1 spaghetti squash

  • 6-8 dried scallops

  • 1 ear of corn

  • 450g pork

  • 2 sweet dates

  • 2500ml water

Steps

  1. Clean the spaghetti squash and cut it into big chunks. Cut the corn into three pieces.

  2. Put the pork in cold water. Bring it to a boil and rinse clean.

  3. Soak the dried scallops in water for at least 3 hours. Keep the water.

  4. Add all the ingredients in cold water. Bring it to a boil and continue to boil on high heat for 30 minutes. Change to medium- low heat and simmer for at least 2 hours.
