Chicken Soup with Fresh Ginseng and Mushrooms


  • 1 chicken

  • 6 dried shiitake mushrooms

  • 5 pieces of Chinese ham

  • 1 fresh ginseng

  • 8 red dates

  • 6-8 dried scallops

  • 20 goji berries

  • 2500ml water


  1. Soak the shiitake mushrooms until they soften. Keep the water.

  2. Soak the dried scallops in water for 3 hours. Keep the water.

  3. Put the chicken and Chinese ham in cold water and bring it to a boil. Take them out and rinse clean.

  4. Wash the fresh ginseng.

  5. Soak the red dates until they soften. Cut the seeds out.

  6. Soak the goji berries in water for 10 minutes.

  7. Put all the ingredients, including the shiitake mushroom water and the dried scallop water, into cold water. Boil on high heat for 30 minutes then change to low heat. Simmer for 2.5 hours.
