Monkey Head Mushroom and Chinese Yam Soup with Pork


  • 4 monkey head mushrooms

  • 1 fresh Chinese yam

  • 10 dried longan

  • 20 gojiberries

  • 3 sweet dates

  • 8 dried scallops

  • 400g pork

  • 2000ml water


  1. Soak the dried scallop in water for at least three hours. Keep the water.

  2. Soak the monkey head mushroom in water for 30 minutes. Rinse clean and tear into small pieces.

  3. Soak the dried longan and gojiberries in water for 10 minutes.

  4. Cut the fresh yam into chunks. Put in water.

  5. Put the pork in a pot of water and bring it to a boil. Take it out and rinse clean.

  6. Blanch the monkey head mushroom in hot water for 2 minutes. Take it out and rinse under cold water. Squeeze out the excess water.

  7. Put all the ingredients, along with the dried scallop water, in cold water. Bring it to a boil and cook on high heat for 30 minutes. Turn to low heat and simmer for 2.5 hours.
