Sea Snails in Spicy Wine Sauce


  • 600g sea snails

  • 3 scallions

  • 5 pieces of ginger

  • 3 cloves of garlic

  • 3 shallots

  • 3 chili pepper


  • 1 tablespoon of chili oil

  • 2 tablespoons of chili bean sauce

  • 1/2 teaspoon of sugar

  • 1/2 teaspoon of soy sauce

  • 200ml of Huadiao cooking wine

  • 1 tablespoon of Chinese rose wine

  • 200ml chicken stock


  1. Soak the sea snails in salt water for 1 hour. Scrub the shells clean.

  2. Prepare a pot of hot water. Add 1 scallion, 2 pieces of ginger and a tablespoon of cooking wine. Blanch for sea snails for 3 minutes. Take them out to dry.

  3. Mince the garlic and shallots. Stir fry with the rest of the scallion and ginger on medium heat until aromatic.

  4. Add the sea snails and continue to stir fry for 5 minutes.

  5. Add the chili oil, chili bean sauce, sugar and soy sauce. Stir fry for another 3 minutes.

  6. Pour in the Huadiao wine and the rose wine and cook on high heat. Add the chicken stock and cook for 10 minutes.
