Steamed Pork Patty with Preserved Mustard Greens (Mui Choi)


  • 4 dried shiitake mushrooms

  • 300g pork

  • 60g preserved mustard greens


  • 1/4 teaspoon of salt

  • 1/2 teaspoon of soy sauce

  • 1/2 teaspoon of sugar

  • 1 teaspoon of cooking wine

  • 2 tablespoons of shiitake water

  • 1 teaspoon of corn starch

  • 1 teaspoon of oil


  1. Clean and soak the shiitake mushrooms in water overnight. Keep the water for later.

  2. Dice the mushrooms. Add a bit of sugar, cooking wine and soy sauce to marinate.

  3. Rinse the preserved mustard greens under water and wash away the sand. Soak it in water for 10 minutes. Squeeze out the excess water afterwards and dice. Sautee without oil and a bit of sugar. Take it out and put aside.

  4. Mince the pork. Add in all the ingredients in the marinade. Mix well in the same direction and marinate for 20-30 minutes. Add in the mushrooms and the mustard greens.

  5. Put the meat mixture on a plate. Steam on high heat for 12-15 minutes. Let it rest for 5 minutes before taking it out.
